How Do You Define Consulting?

Do you have trouble explaining what you do to relatives and friends? Mine still don't really "get" what I do. Funny story - my Dad worked for the government, and at his retirement ceremony he introduced me to an audience of federal workers and told them my job was "downsizing the government." Frustrating, but not wholly unexpected. How do you bridge this gap and describe what you do to the people you know?
